Classic Cocktails

For a summers afternoon

Eastside/ Eastside Rickey

A combination of gin, cucumber and mint, this is the perfect summer party cocktail. Muddle two slices of cucumber (optional) in a cocktail shaker, slap and add small handful of mint leaves, 15-20ml sugar syrup, 30ml lime juice, 50ml gin and shake vigourously. Strain into a tumbler glass with ice and garnish with a sprig of mint and a slice of cucumber.

Mojito

A universal favourite, we have to include it. We slap a few mint leaves (to release the aromas) and add to the bottom of a highball glass with a few squeezed segments of lime and 10-15ml sugar syrup. Mix and build with crushed ice, 50ml rum, 25ml lime juice and more mint leaves. Mix and add more ice to cover the glass, top up with soda and garnish with mint and a lime wheel.

Bramble

A fresh, sweet and berried gin cocktail. Pour 50ml gin, 25ml lemon juice and 10ml sugar syrup into a cocktail shaker, add ice and shake well. Fine strain into a rocks glass over ice, and slowly pour the creme de mure over the top of the drink. Garnish with a lemon wedge and a fresh blackberry.

Margarita

After discovering such a premium selection of tequilas, we have a new found love for the classic Margarita. Prepare your glass by rubbing a wedge of lime around the rim and dabbing it on a plate of salt. Pour 50ml tequila, 25ml lime juice and 20ml of Cointreau in a cocktail shaker, fill with ice, shake and strain. Garnish with a lime wheel.

Negroni

Perfect for a warm summers evening. Pour 30ml gin, 25ml Sweet Italian-style Vermouth, 25ml Campari and 2 dashes of orange bitters in a mixing glass with ice. Stir well and strain into a tumbler glass with ice, garnish with a strip of orange zest.

Evening drinks

Manhattan

One of our favourites, this classy cocktail is suggested to date back to the late 1800s. Add 50ml of your favourite rye whiskey, 25ml sweet vermouth and a few dashes of bitters to a mixing glass with ice. Stir well and strain into a chilled Nick & Nora glass. Garnish with a Maraschino cherry.

Vesper

James Bond’s favourite drink, pour 45ml gin, 10ml vodka and 10ml Lillet Blanc into a cocktail shaker with ice. Shake and double strain into a chilled Nick & Nora glass and garnish with a lemon zest.

Corpse Reviver No2

From Harry Craddock's famous 1930 book The Savoy Cocktail Book, the Corpse Reviver No.2, is one of the greatest pick-me-up cocktails. Pour equal parts (22ml) gin, Cointreau, Lillet Blanc and lemon juice in a shaker with a dash of sugar syrup and absinthe. Shake and strain into a chilled glass and garnish with a lemon twist.

Cosmopolitan

Bright and zesty, this popular cocktail with the added flamed orange zest is a sure party starter. Pour 45ml Vodka, 15ml Cointreau and 10ml lime juice into a shaker, add ice, shake vigorously and strain into a chilled cocktail glass. Cut a strip of orange zest, push the outer edge of the zest over a flame so the orange oils are released into your drink before you garnish.

Martini

The cocktail to enhance premium gin and vodka. There are so many ways to make one, you could have an event exploring only Martini variations! In any case, we think the best way to find our perfect drink is through experimentation. How dry do you like it? Shaken or stirred, dirty? We love an extra dry Martini with 50ml of premium gin stirred in a mixing glass and strained into a chilled Martini glass rinsed in dry vermouth.

Fruity Cocktails

Pina Colada

Add 50ml rum, 40ml cream of coconut (we love Coco Lopez), 40ml pineapple juice and 15ml lime juice to a cocktail shaker. Add ice and shake vigorously. Strain into a Hurricane glass with crushed ice. Garnish with a pineapple wedge and leaf.

Mai Tai

The worlds favourite Tiki drink, combining two types of rum, Grand Marnier or orange curacao, almond-based orgeat syrup and fresh lime juice, this punchy but fruity cocktail is a rum lovers dream. Add 45ml white or golden rum, 20ml Grand Marnier, 20ml lime juice and 15ml orgeat syrup into a shaker, add ice and shake vigourously. Strain over crushed ice and pour 15ml of dark rum into the glass over the backside of a spoon, floating it gently over the top. Garnish with a lime wheel and a cherry.

Clover Club

Sweet, creamy and delicious. Traced back to the late 1800s, a premium gin is a must, and the egg white (although optional) creates a luxurious, silky texture. Add 50ml gin, 15ml raspberry syrup, 15ml lemon juice and an egg white to a shake and dry shake (without ice) for around 30 seconds to get the delightfully thick texture. Add ice and shake for a further 10 - 20 seconds, and strain into a chilled cocktail glass.

Cherry Margarita

A fruity twist on the classic Margarita, add 50ml Blanco tequila, 25ml maraschino liqueur and 25ml lime juice to a cocktail shaker, add ice and strain into a chilled cocktail glass.

Bourbon & Apple Fizz

Fruity, refreshing and different. Pour 50ml bourbon, 25ml lime juice and a few dashes of Angostura bitters in a cocktail shaker, add ice and shake well. Strain into a highball glass and top up with ice.

Something Different - A tribute to the amazing mixologists at 1806 Cocktail Bar, Melbourne.

The cocktails below are a few of Ellie’s favourites during her time working at 1806, a cocktail bar in Melbourne. Some seem unlikely combinations - but trust us!

Angels Milk

Luscious, like a dessert or sweet biscuits, we had to include it. Pour 35ml Sake, 35 milk & cream combo, 15ml Frangelico and 15ml Orgeat Syrup into a cocktail shaker. Dry shake (without ice) to make it thick and creamy, then add ice, shake until cold and strain into a cocktail glass.

Beauty and the Beast

We prepare our own charred rosemary syrup for this one. Floral, sweet and delicious. Add 30ml Sailor Jerrys, 30ml Plum Sake (we love Akashi-Tai Shiraume Umeshu), 25ml of lime juice and 10ml charred rosemary syrup into a cocktail shaker. Shake and double strain.

The Black Blazer (inspired by The Blue Blazer)

This is a silky smooth, boozy hot chocolate. We give this as the end of the night treat in our cocktail masterclasses and taster sessions. Including Pampejo Anejo, Mozart Dark Chocolate Liqueur, White Chocolate Syrup, orange bitters and a cube of chocolate set alight and blazed. It is such a treat, (and quite difficult to make!) we want to be there when you first try this.
